Stopping an elder from emptying their glass would interrupt rather than support the ritual, and getting visibly drunk before they do reverses the expected order of restraint, both coming across as poor form.
That said, pressure to drink at all has been softening in recent years, and politely declining alcohol upfront is now widely accepted, even as the posture-and-refilling etiquette remains common among those who do drink.
